Asparagus

This past week, I’ve fallen in love with a new vegetable – asparagus. I know a lot of people eat asparagus on a regular basis, but it was never anything that was served in my house when I was growing up, so I’ve largely ignored it as an adult.

I have sampled the raw stuff before when it was included on a vegetable tray at a party, but it didn’t do anything for me (even covered in ranch dressing). However, last week I went to dinner at a friend’s house and she was serving asparagus, so I decided to give it a try. It was delicious and looked great on the plate!

I asked her how she made it and she said she just lightly coated it in olive oil and garlic, cooked it in a grill pan on the stove for a couple minutes (to get the nice grill marks), and then finished it off in the oven until it was tender. What a wonderfully simple recipe – just my style!

When I did my grocery shopping a couple of days ago, I picked up a bunch of the long, green stuff at the store and have also read a little about it. Here’s a few interesting tidbits that I found:

  • Asparagus is high in vitamins B6, C, is an anti-carcinogen and an antioxidant (your nutritionist or nurse will love it when you tell them you’re eating this veggie).
  • It comes in three colors: white, green, and purple.
  • It’s kind of expensive for a vegetable — $4 or $5 for one bunch.
  • You have to break off the tough ends and wash it really good before cooking.

Also, there are a several different ways to cook asparagus… steam, blanch, grill, etc., so you may have to experiment with the different methods until you find one you like the best. All in all, it’s a great veggie to add to your regular diet.

Baja Citrus Salmon

I’ve discovered that meals are a lot easier when you have quick-cook or no-cook side dishes. For example, I mostly buy frozen veggies, and then just steam them in the microwave. If you are only feeding a few people, you can buy those steamable packs and save even more time; just pop them in the microwave and they take care of themselves. Also, I’ve been serving a lot of fresh fruit with dinner (pineapple is my favorite), which is tasty and healthy.

So, with two side items that require basically no preparation, I really only have to worry about the main dish. For those, I like to use additional shortcuts, one of which is spice packets.

A packet I use quite frequently is McCormick Grill Mates Baja Citrus Marinade.

It says you can use it on fish, seafood, or chicken, but I’ve only used it on fish, particularly salmon, and it turns out great every time.

I’ve found that you should at least marinade it for a few hours if you want to get the full flavor, but it still tastes pretty good even when you put it on right before. I’ve cooked it both ways and adults and children both gobbled it up. Truthfully, it’s the only way I can cook fish where everybody likes it.

Despite it being called “grill mates,” I usually just cook it on the stovetop at medium-high heat (the dial is at 6 or 7 on my electric stove).  I only mention this because it took me a few tries to figure out the right temperature to cook salmon. If it’s too high then the outside burns and the middle stays pink, and if it is too low…well, it just takes forever. So, if your stove is like mine, then somewhere between 6 and 7 is the magic number.

Otherwise, I just cook it according to the package directions. Besides your chicken or fish, a little oil, water, and vinegar is all you need.

When you’re done, you have a dinner of veggies, fruit, and flavorful salmon. Does it get any easier or better for you? Little preparation, simple food, and quick cleanup means you have time to devote to something you really want to do. You can do anything from read a book to pick out your next tattoo. It’s totally up to you – that’s the beauty of free time.

Welcome!

Hi, my name is Kayla, and I’m in the process of simplifying my life. Does that sound like something someone would say in an addict’s anonymous meeting? Well, I don’t have any addictions (unless I’m in denial), but I do feel like life is getting a bit too “heavy.”

Too many bills, too many responsibilities, too much stuff, and I’m tired of feeling like I need an administrative assistant to help me run my life! While some people like to have a ton of things going on at once, I’ve realized I do better with a minimalistic life. So, I’m in the process of cutting things out, removing the clutter, being more frugal, and eating more simply – which, brings us to the topic of this blog – simple food.

I love food as much as the next person (if not more), but I’ve gotten to the point where I’m tired of eating like every day is a holiday. Huge pot roasts, lasagnas, casseroles, complicated desserts … these things just take too much time, require too many ingredients, and, for the most part, aren’t very healthy.

I’m at the point where I’d much rather save these things for special occasions, and stick with easy, healthy foods with few ingredients for day-to-day fare.

I’ll get things started with one of my all-time favorite easy recipes: Caprese Salad. The key to making this dish great is by purchasing the best ingredients – vine-ripened tomatoes, fresh mozzarella, basil straight from the garden, and the good kind of olive oil. I find that when you cut-down on ingredients you can afford to buy better quality food. Here’s the recipe…

Caprese Salad

  • 3 to 4 medium-sized tomatoes in ¼ inch slices
  • 1 lb. of fresh mozzarella in ¼ inch slices
  • 1 bunch of fresh basil (leaves only)
  • Extra-virgin olive oil
  • Salt and Pepper

Make alternating layers of 1 slice of tomato, 1 slice of mozzarella, and 1 basil leaf across a plate or shallow platter. Drizzle olive oil over top all the layers and sprinkle with salt and pepper (to taste).

That’s it – done! Sometimes the simplest things taste the best.
